ice-cream sandwich
The first ice-cream sandwiches were probably made by New York street vendors in the late nineteenth century.

Ingredients
230 g sunflower oil
100 g granulated sugar
150 g brown sugar
2 eggs
10 g Vahiné® vanilla flavouring
600 g plain flour (≤10% protein), mixed with
5 g bicarbonate of soda
2 g fine salt
60 g Simón Coll® 60% cocoa and vanilla chocolate

11 cm ∅ biscuit cutter

This recipe makes about 20 sandwich biscuits.
Biscuits
- Finely chop the chocolate with a knife and freeze.
- Prepare all the ingredients and preheat the oven to 180°C, no fan.
- Pour the oil and sugars into a bowl. Whisk well.
- Add the eggs and vanilla flavouring and continue whisking.
- Add the dry ingredient mixture.
- Add the chocolate and finish kneading the dough.
- Roll out the dough, using guides to ensure an even thickness, and cut out rounds with the 11 cm biscuit cutter.
- Transfer to a baking tray lined with baking parchment and bake for 6 minutes.
Assembling the sandwiches
- Using the 11 cm biscuit cutter, cut out rounds of ice cream and assemble the sandwiches.
